For Pascal Robin, his philosophy can be summed up in two words: patience and time. For 36 years he was in charge of the chai each vintage at a Chablis domaine, taking responsibility for the crucial pressing stage of the winemaking, at the same time as bringing his expertise to the vinification and the elevage of the new vintages. In 2018, thanks to all the experience he had gained, he decided to take the step to create Maison Pascal Robin, to be able to share his passion for vine and wine. His family have been in possession of vines in Beine for more than 25 years, where Robin makes his Chablie “Vallée Sébillon”. He adapts his vinification techniques according to the different terroirs he works with; similarly, elevage is done either in inox or in wood on fine lees, depending on the needs of the individual wine. He creates his wines in the spirit of biodynamism, according to the lunar cycles, and starting fermentations with wild yeasts. The oak barrels are between 7 and 20 years of age, which allows the wine to express itself without becoming too wooded. All the vintages are harvested and created by hand.
