Au Dessus du Gros Mont
Guillaume’s inaugural Champagne, Au Dessus du Gros Mont, debuted with the 2009 vintage. This exceptional cuvée is made from ancient Chardonnay vines located in the northeastern part of Cramant, within the Avize Grand Cru. These cherished vines were gifted to Guillaume by his grandmother on his 18th birthday. The vineyard sits at a high altitude and features a unique dual-exposure: part of the plot faces south, capturing ample sunlight, while the other faces north, offering a cooler microclimate. This interplay creates a Champagne of remarkable depth and balance, with production remaining highly limited.
Largillier
In 2012, Guillaume introduced Largillier, a blanc de noirs Champagne created from Pinot Noir grapes grown in a monopole vineyard in Villes-sur-Arce, part of the Côte des Bar. Partnering with Jérôme Coessens, who owns this extraordinary site, Guillaume sought a fresh challenge to explore the potential of a different terroir.
The vineyard is planted with 45-year-old Pinot Noir vines on clay-limestone soils underpinned by Kimmeridgian chalk, the same type of subsoil found in the vineyards of Chablis. Its southern exposure enhances grape ripeness, while the soil composition lends a refined minerality to the wine.
Guillaume’s meticulous vinification process reflects his commitment to excellence. The wine spends two years aging on the lees in barrels, followed by an additional year blended with a perpetual reserve before bottling for secondary fermentation. The result is a Champagne of extraordinary complexity, texture, and terroir-driven character.
