Antonio “Tonio” Quari is the winemaker at the prestigious Domaine Prieuré Roch in Burgundy. After learning and honing his craft under the tutelage of Henry-Frédéric Roch and Yannick Champ, he now produces his own wine, following a philosophy deeply rooted in tradition and respect for nature.
His passion and vision are perfectly encapsulated in the motto of his label: Non Progredi est Regredi: “To not go forward is to go backward.”
Ladoix Les Briquottes vineyard was planted in 1976. This exceptional terroir has been cultivated organically for over ten years under the care of the only natural grower in Ladoix. Tonio then applies winemaking techniques similar to those at Domaine Prieuré Roch:
- 100% whole bunch fermentation,
- No sulfur used, except for a tiny amount (less than 1g) at bottling,
- Foot pigeage and gravity-based remontage,
- Aging for ten months in old barrels.
The result is a wine of rare authenticity, faithfully reflecting the unique character of Burgundy’s terroir while embodying remarkable elegance and depth.
