Antonio “Tonio” Quari is the winemaker at Domaine Prieure Roch; having learned under the close tutelage of Henry-Frederic Roch and Yannick Champ he is now making some of his own wine. His passion and vision are made clear with the motto on his label Non Progredi est Regredi: “To not go forward is to go backward”. This is Pinot Noir from Ladoix Les Briquottes vineyard, planted in 1976 and farmed chemical-free for more than ten years by the only natural grower in Ladoix, then made by Antonio with a similar winemaking philosophy to DPR: 100% whole bunch, without any use of sulphur, except for a tiny amount – less than 1g – at bottling. Pigeage is done by foot, and remontage by gravity only, with elevage for ten months in old barrels.
